Food safety management system
Businesses selling food must have a satisfactory, workable food safety management system that is based on the principles of hazard analysis critical control points (HACCP). To do this you may need to increase your knowledge of food safety.
The Food Standards Agency have published useful documentation systems for small caterers and retailers called Safer Food Better Business (SFBB). The system involves looking at the risks to food, putting in controls, monitoring the controls and making sure they work. This will involve ensuring all staff are trained to understand and follow it.
